Sori Yanagi Bread Knife made by special stainless steel contained "molybdenum vanadium" that gives sharpness, durability and corrosion resistant. The special wavy designed edge makes less crumbs and could not resharpen able.
Handle material: 18-8 stainless steel (SUS304), with this material, it become more hygienic compare to wooden handle. Also appropriate to high temperature (350°F) / high pressure dishwasher.
